Two different OS on different drives?

Is it possible to put, for example, Windows 10 on one SSD, and Linux on another, and through the BIOS already choose which system to boot this time? Will I have full access when booting from Windows to files on another drive (like games) used to install Linux and vice versa, or is there no compatibility?
There are two disks and I want to get to know Linux better (I don’t want to use a virtual machine).

There is also an excellent boot manager Acrons OS Selector for choosing the OS to boot. Installing several OS on one PC makes sense if you need maximum performance and direct access to the equipment from the OS or software. In all other cases, virtualization is enough - VirtuslBox, etc., which is much more convenient and you can switch between OS instantly.
