A friend wants to build a TV selector: four RCA connectors for input, one for output. Only this one was googled , but I would like something simpler. If you do it like this, will it work (given that only one toggle switch will be turned on at a time)?

Yes, it will work. Instead of toggle switches, you can put buttons with dependent fixation (pressed one - the rest snapped off), for example, P2K:
