I set up a server, but as I understand it, SSL encrypts only traffic, the letters themselves (source codes) on the clients and on the server will not be encrypted by the reception? How do I get encrypted emails in the maildir folder?

I was young and stupid. On the mailers entrusted to me there were letters, and in them an attachment, naturally attachments in a technical (binary form) I thought that they were already encrypted in maildir. After I took a look at the letter, everything became very clear, the traffic is encrypted with SSL'em, the letters can be easily read through the client.
