Start without categories (groups)
I myself mostly sit under Windows, but for some time I have been thinking about switching to linux. So far, xubuntu seems to be the most convenient option for me. But what I have noticed in all the distros I have tried is that the application menu (well, or start) is always structured by category. Is there a GUI, or can this be configured to be a linear list sorted by application names? Because I absolutely do not understand sometimes in which category to look for a newly installed application.

If I remember correctly, from the popular ones: KDE, Cinnamon, Mate, Unity can display all applications in a single list.
There is also a search for applications.

Why do you need a start button? For example, I don't use it at all. IMHO it's faster to call the terminal and type the name of the program. You gain freedom - you do not depend on the graphical environment.
In KDE4, by default, there is a widget that can replace the start button with groups, with a list ala win95
On the panel (usually on the right) there is such a “snot”, click it. There is an item to add widgets. In it, the category is launching applications. In the list, the widget is a classic application launcher.
