I replaced my DVD drive with an SSD in my MacBook Pro. The old hard left as is. Subjectively, the operating time practically did not decrease, but I did not measure anything.
Switching to an SSD is worth it, but I would leave the second hard drive, simply because bulky SSDs are expensive, and you need to store data somewhere.
