I decided to make my own guitar processor using arduino or raspberry. Where to dig, what to read, which foot to saw?

Digital Signal Processing, but the arduina will not pull for sure without attachments.
Look also at a thing called "Pure Data" - there you can programmatically build processing.

The usual distortion - just take the exhaust from the ADC and cut off all values above the threshold amplitude to the threshold.
