Server for 1C and other services, how to organize soft-RAID on a hypervisor?

Please tell me, a small organization needs a server for 1C (file databases via apache), on which other internal services will be additionally installed (for example, OnlyOffice document collaboration system, OwnCloud cloud). Internal services require few resources to run, because there will be few users. I have an idea to install XenServer and wrap everything in different virtual machines. But the catch is in RAID, or rather in its absence (there is no money for good hardware).
In general, I see three options:
1. Creating a raid on mdadm after installing the hypervisor - a lot of settings, it's difficult and difficult to update the hypervisor later. If the raid flies - I think I won’t have time to restore it even within an hour.
2. Installing the hypervisor on a separate SSD, and placing the partition with virtual machine data on 2xHDD using mdadm - it will be easy to update the hypervisor, plus it will always boot, if there are problems with the soft raid, I can repair the array from it (ipmi, kvm - on there will be no server, expensive). And since the SSD will have an essentially unchanged set of data, you can keep a copy in reserve in case this SSD suddenly grunts.
3. Try to install the hypervisor on a fake raid from Intel or Marvel 88SE9230 - I think the option is so-so, I have already come across a rake with ICH5R.
There may be other options, I don't know.

I would put proxmox on the second option. From mdraid disks, and on it storage on LVM, so virtual machines can be set to RAW, reducing overhead disk operations to zero. Perhaps and most likely xen can also do this, but I have no experience with it

I would advise you:
1 some simple Adaptec 3405 BU you can buy for 50-100 dollars.
2 if not, then option 2 is the most problem-free (but it’s not clear why the ssd under the hypervisor)
