Security and permissions of android devices. Why do they require information about the phone and calls?

Good day.
I am not an android application developer and this is why I have such a question. Most android applications require access to information about calls and smartphone id . I have a working mob. a phone that makes a lot of calls during business hours. Do I understand correctly that the application developer can collect information about phone calls? If so, is it possible to somehow restrict all applications from accessing them?

For the first question, yes it can. And since the application is not the only one, the developer will be able to build an extensive network of your contacts.
Since Android is a commercial network, the only way to restrict applications from each other is to get ROOT rights and install XPrivacy.

I recommend not to install such applications or disable any secondary functionality from the operator (mobile banking, services via SMS) - requiring a separate payment. And if you do not give permission to the application, then most likely it will not work.
