Replacing the DNS provider with Google's DNS, shows one of the provider's DNS, does this mean that it replaces the DNS?

In order to save money, your provider, in order to block prohibited sites, simply redirects your dns requests (port 53) to its server. You can solve this using vpn, for all traffic, or only for dns requests.
And by what method did you find out that the provider replaces the dns server?
