Removal of traffic, is it possible to implement?

There is a machine with three Ethernet interfaces. With the help of what technology (protocols, services, etc.) is it possible to organize the removal of all passing information between the eth0 and eth1 interfaces on the eth2 interface? The eth0 and eth1 interfaces are connected to a line break. The machine can be running Ubuntu server or Debian. Has anyone done something similar? How?

If you are the administrator of this machine - yes, at least with some. tcpdump for example, writing to a file for later analysis. Yes, yes, feel like Spring :)

Strange eth break scheme. Usually on the switch port mirroring + wireshark.
