Recognition of printed material - where to start?

I chose a topic for my graduation project - "Notice Staff Recognition" (reading music from a scanned sheet and converting it into an accessible music/tab format like guitar pro/tux guitar).
What literature would you recommend reading before starting work (given that the specifics of the "language" are different from the usual text)?

There is a library - OpenCV , which exists for most popular platforms and is used for image recognition. I used it for face recognition and with a short training, it did a good job of this task. In one of the top outsourcing companies in our country, it is used to recognize traffic signs.
