On my Atom N2800 and 2GB RAM nextcloud works on nginx units. Recently switched from nginx + php-fpm. It is difficult to give some metrics, but subjectively it has become faster to work, consuming many times less RAM. Now it is ~150 mb, and with php-fpm it was ~700 (I had to keep 10 workers, otherwise everything was very slow). It is especially noticeable when watching a video with NC in the browser, when the file is given in some chunks, some xml manifests for it are given. With nginx units, it became much faster to toss and turn.
Before that, I fiddled with php-fpm for a long time, but I couldn’t noticeably speed up the work. nginx units I have default settings.

For a couple of users - Apache, there is no point in bothering with the nginx
database, if there are a lot of files - postgres, it obviously works faster
And yes, install nextcloud, it's free

I raised one user at all on lighttpd, it works.
But for Apache, there are probably more recommendations on the net.
