Nextcloud in proxmox - how to organize storage?

Welcome all.
There is a home server HP Microserver Gen8, it has 1 SSD and 2 HDD.
It is planned to install Proxmox on the SSD, combine 2 HDDs into RAID 1.
Several virtual machines with shared access will be deployed in Proxmox:

• Nextcloud
  
• Torrent
  
• DLNA server
  

And then the question arises: how to format and connect the HDD? So that work with disks was at a decent level.
