Advanced Mac OS X Programming , by Mark Dalrymple and Aaron Hillegass. It's mostly Mac OS X from the Unix side. Highly recommend. And this same Aaron Hillegass has Cocoa Programming for Mac OS X , but I looked at it superficially, only one chapter, which also turned out to be very sensible. Also on XCode, I liked the book Step Into XCode , by Fritz Anderson, but the one I have describes a rather old version, I don’t know if there is a newer one.

If there is no basic knowledge (such as java for example) and you want to start all over again, then for Mac it is best to program in Objective-C. Unfortunately, I have never come across books in Russian and therefore I started with a course in English which consisted of the following books from Apress:
Learn C on the Mac ( http://www.apress.com/9781430218098 ) (in my opinion this book is not very a must as it serves more as an introduction to the C language) Learn
Objective-C on the Mac ( http://www.apress.com/9781430218159 )
Mac ( http://www.apress.com/9781430218593 )
Now there are already relatively more books in English that give a basic Objective-C course and immediately send them to do applied development with Cocoa

For system development, it’s probably worth learning C, this is for Kernighan and Ritchie, and for applied development, you need to decide on the language.
