Logging long-running PHP scripts?

Tell me how to set up or what to put so that you can log all running scripts that can take a long time to run, freeze, etc.
There are times when php-fpm gets clogged, I understand that there are timeouts, but I want to find the root of evil and understand who is the first to hang .

I came across one site that, when installing certain packages, allows you to monitor the status of php-fpm and shows long-running scripts, but I would like to catch them myself
