Installed wireguard, iptraf on ubuntu server. I connect from the device to the server via vpn, start surfing. But from the server I can only see the visited resources only IP addresses. How can I make it possible to see specific sites? And how can you block some resources?

"Specific sites" are visible in the initial HTTPS packets, they can only be blocked at this moment (before the implementation of ECH , as soon as possible). An HTTP proxy in transparent mode is best suited for this.
