Question: are there any good keyboards with a set of correct variants of characters such as dashes, quotation marks, herringbones and other things? Still, I want to write, arranging the texts correctly.

Do you want a keyboard where these symbols will be displayed on the keys?
If "No":
For Windows, there is a program that allows you to edit the layout by adding your own characters, for example, on Alt + Y and put a dash on Alt + S.
On the Mac, there are combinations in English. layout:

Alt+- - dash
Alt+| - "
Alt+Shift+| – »

If you do not find such a keyboard, use the keyboard layout editor.
On Macs - Ukulele http://habrahabr.ru/post/38628/ .
On Windows it's a little worse, but it's also there: http://msdn.microsoft.com/en-us/goglobal/bb964665.aspx (Win 2000... Win 7)

Is it really necessary to always contrive and get used to crooked layouts? Are there keyboards for gamers?

I'm a copywriter. It's easier for me to remember numbers.
Alt+0150: -
Alt+0151: -
etc.
