It depends on a lot. I would not flog a fever. If you are using a GSM gateway to connect to the SIP server, then it may actually be better to go directly. Although it depends on the codecs that are used for voice transmission.
If there is a comparison of GSM communication with SIP, then I would vote for GSM. All the same, SIP is not the best connection in the world. Those. no, everything is cool, but not when, for example, a mobile phone is used for talking. In general, everything is not so clear.
