Is it possible to use integrated processor graphics in a dedicated server?

I want to rent a dedicated server with Core i7 that has integrated graphics. Do I understand correctly that by installing win10 on it, I can use it as a normal computer via rdp, see the desktop, run a browser and any other window applications?

Quite right, it will be possible, and for this you don’t even need a built-in - it will work without a video card at all.
