Is it possible to make such a raid?
The essence of the task: it is necessary to make sure that the data is protected from loss as much as possible.
The computer currently has a 250GB screw. I'm thinking of buying 2 terabyte screws and making a raid out of them, but the question arises, is it possible to do this at all? That is, 1 screw per 250 will be used, which is not in the raid and 2 of 1TB in the raid.
And yet, will I lose performance from this?

The RAID array will be treated as a single drive. So there should not be any problems when working hard at 250 and an array. But performance is a tricky issue. Depends on the choice of RAID and how you distribute the files.
Most likely you want to mirror (RAID 0), that is, you will have a fast 1TB disk and a slow 250 gigs. If you leave the operating system at 250, then there will not be much performance gain. So see how you best distribute files - so that everything that requires reliability and speed is on RAID.
With software raid level 0, performance is usually higher due to duplication of information on disks. Therefore, theoretically, with intensive disk operations, there will be a gain in speed. Practically - it is necessary to check, well, it all depends on the disks themselves. And yes, it's better to keep the OS on an array too.
