Hello!
There is a mail server that processes mail addressed to the example.com domain.
Is it possible to set up a second server for the same domain? And on two servers to keep different lists of mailboxes?

in general terms, you can. for example, you have a server, it is registered in DNS as MX, respectively, mail from the Internet falls on it. I will assume that you have postfix as an smtp server, well, because I want to. So postfix can do this thing called transports maps , you can configure how it will route mail for different recipients.
For example, boxes starting with A , say up to L will fall on server 1, and boxes from M to Z will fall on server 2.
