Is it possible to issue IP addresses from different subnets for different devices?
We have a server with Windows Server 2008 R2 on board with the DHCP role installed.
2 areas are configured in DHCP, the path will be 192.168.1.0/24 and
192.168.2.0/24 printers, etc.) - from the second area.
I tried to solve this problem through provider classes, but my knowledge of DHCP is clearly not enough and, as a result, nothing worked out for me - addresses were issued to everyone from the second area.
Is it possible to solve my problem and if so, how?

Do you have subnets divided into vlans? If yes, then it is better to solve this problem through dhcp-relay. If not, and everything is in the same l2 network, then you will have to encode with the definition by manufacturer prefixes in mac addresses.

And the most likely task is to prevent Android mobile phones and guests with laptops from getting into the corporate network via WiFi, clinging to the guest network, where there is only the Internet?
Make 2 WiFi - guest and corporate in different VLANs or not connected to each other at all. Let the router distribute addresses to guests, not the server.
Share networks! Including wireless. For the left people - some kind of wifi-guest, with their own IP addresses. For employees - wifi-corp, with their addresses. For wired networks - separation by vlans based on departments (each department has its own VLAN + its own subnet). Network devices (printers, scanners) - in a separate segment. And access control on the router, which network you can go to.
