Although the number is shown up to 3 numbers after the decimal point in Celsius, the values ​​are rounded to certain standards, that is, they are not accurate. For example, if my temperature is 31.142 it shows 31.476 or 30.938 (whichever is closer)

Sensor readings are discrete (this is not called "rounding up to standards", as you put it). An external sensor can give you data with a lower resolution, but its lower resolution will be eaten by less accuracy due to the case.
And what practical problem cannot be solved with a discreteness of half a degree?
