Is it possible to do web designs in aillustrator? And will they be different from photoshop designs?

You can make designs in paint, it all depends on who makes these designs.
But on business. I find it much more convenient to prototype and design with AI.
Minimal alterations to the prototype -> design -> layout.

Of course you can, they say that it is even more convenient. Back in 12, an article on this topic was published on Habré. I was not very inspired then, and after a relatively recent Photoshop update, which added artboards and convenient guides, I completely changed my mind about completely switching to a chandelier.
In the end, I decided to make the layouts themselves in Photoshop, and the icons and illustrations in the chandelier (in this regard, it is much more convenient).

It is possible and necessary. The chandelier has a lot of useful features, unlike Photoshop.
But all raster graphics are best pre-edited in Photoshop.

I do both in Illustrator and Photoshop. By mood. Especially with the release of CC 2015, it became convenient to make layouts here and there (especially in terms of artboards). In both programs, somewhere something is better, and somewhere - worse. A bunch of life hacks have long been invented for all this, so there is not much difference. The biggest plus of illustrator is working with text, IMHO. Although indesign is even cooler. But in Photoshop, you can set text and paragraph styles, but I don’t use it much.
