Is it possible to do this with Hyper-V snapshots?

The essence of the question is this - we have a mail server, 2 disks.
1 - system
2 - mail storage.
Here we want to update the mailer and before that we take a picture.
We update. Everything seems to be fine. New mail goes and everything works.
A day later, problems begin that cannot be quickly solved, but work must be done.
If you just delete the snapshot and merge the snapshot from the vhd, then the correspondence that managed to fall into the mailboxes after the snapshot was created will disappear accordingly.
The question is, is it possible to turn off the virtual machine, copy the vhd file on which the system is installed separately somewhere.
Delete the snapshot and wait until the files merge together and then replace the vhd file with the system with the copy that we made.
Thus, we will be able to save all the mail and have a system before the upgrade.
Is this option possible?

If there are two disks, then yes, in theory it is possible to merge the disk with the database, and roll back the system disk. But here you need to understand how the OS itself will react to this.
I don’t know how with nix systems, but with Windows, you can simply slip a vhd disk with the OS and start the machine, but the drivers for the network cards will be updated.
