Is it possible to divide a dedik several times?

Hello, I have not worked with dedicated servers yet, only with VDS.
Therefore, it is interesting if I divide the dedik into several VDS, will I be able to change the distributed volumes on the hard disk / RAM without losing data on the VDS.

I want to divide into 2 VDS:
60gb 60gb
8gb 8gb
Then change so that there are 3 VDS:
50gb 35gb 35gb
8gb 5gb 3gb

Can. Only there are a lot of nuances in each virtualization technology.
For example, if you choose hardware virtualization (KVM / VMware / etc) and install on a Centos virtual machine with the default XFS file system.
An XFS file system cannot be scaled down.

What a question - such an answer: yes you can, if you take into account the nuances.
