Is: MS Exchange, on it there is a mail collector (a box in which all mail from all others is copied).
It is necessary: ​​to decompose this mail into user folders shared on the network.
With what help it can be implemented? The OS doesn't matter.

What the hell? What prevents the user from taking it directly from the server? Why is this duplication of data? I will accept extra disks / storage systems as a gift :)

Just as an idea: If the mail address for logging mail is used exclusively for logging, and I doubt that anyone is watching in real time the volume of mail passing through the mail server, then I really don’t understand why to produce entities.
Turn on Ligitation Hold for all boxes. We manage with the usual backup.
Update the employee dismissal procedure, unloading the full PST file before deleting the employee's mailbox - put your hands on the file ball.
Profit - no extra storage, crooked crutch scripts, all mail remains inside the organization, forever.
