Is this some kind of custom? If it's really 16Gb of RAM and i7 - then it's generally good!
You should not even worry about the SSD, of course you will have to buy an external drive for backups! I have a system, all applications, browser cache and 5 projects - take about 70Gb.
The rule of living with 128Gb is very simple, upload all completed projects in a month to the cloud or to an external hard drive. For development, as for me, there is enough memory, now I have 256gb and I still have 160 free (in addition to the 70 gigs that I wrote above, there is also a couple of virtual machines).

128 ssd will be small and annoyingly cramped. no, you can live, they will tell you about discipline and all that. but you're going to spend a lot of money and with that money buy a compromise... well, I don't know.
if you buy an old one, with normal ports and without butterflies, then you can somehow live well with a jet drive.

I would still consider the option with 256.
