Usually Romankov's book "Introduction to Cryptography" appears in recommendations on the topic of cryptography. I myself have not reached it yet, but according to reviews, it very intelligibly explains the principles for beginners. Find the 2012 second edition.

For insight into the philosophy of data protection, cryptanalysis and all that stuff, there's Bruce Schneier's classic book. Everything is written in it in an accessible, intelligible, structured, divided by topic. Just the base to start development! :)
