Agree with previous comment. What difference does it make what PD environment is if you do it in the simulator. How you will implement it and what to use it is up to you. The question is not entirely correct.
For example:
1. Connect offices
2. Raise IP connectivity (routing) between branches
3. Install 2 routers. Set up PTP link. The first one will emulate the provider (PE), 2 yours (CE), in your central office
4. Set to 2 NAT, add default route
