Using WooCommerce, you can create a website without special skills and understanding how it all works. I remember when I researched this plugin, just created an online store for myself, connected a payment gateway (like Robokassa or Interkassa, I don’t remember anymore) - there were no obstacles at all.

Use OpenCart. The functionality is painfully light and specially tailored for an online store. In terms of SEO, there is no problem.
You have zero experience with WooCommerce. You will only lose time.
There are no options for WordPress - only Woocommerce.
If up to 200-300 products, then a good solution, and in terms of SEO too.
If more - Opencart or Bitrix.
Use the EDD plugin. Wookiee is easier. Has no Wookiee problems. Paid in extensions - but they are worth it
