I am hiring a staff member/assistant. How to deal with money and legalization?

Preface
There is a big project that I have been working on for some time, a consulting firm and an intermediary firm. Plus a couple of small personal projects that would be nice to finish.
There are also two children and a pregnant wife who gives birth in a couple of weeks.
I also have a permanent job, I work remotely, I don’t strain much. This is what a multitasker is.
Essence
In view of the upcoming replenishment, I won’t be able to work at all for about a month, and after that only permanent work will remain, for additional. time projects to stay will be minimal.
Due to the complexity of the current project and my longtime dreams, I decided to hire an assistant programmer who will do these projects for me full time, I will act as a consultant who guides and tells how to do it right. The intermediary firm is not opposed (and this was even discussed in advance), in the future there will most likely be other projects, so there is a front for work and I think that this may be the beginning of an outsourcing company.
Question
How to organize all this correctly?
On the Internet, many write that registering a company right away is wrong. You need to work in gray, etc.
The programmer and I are in different countries, the question is how to organize the receipt of their salary and at the same time so that none of them grabs us by the ass?
I thought to pay via PayPal, or international transfers, something like that.

It seems to me that in your case it is obvious even to an idiot to hire a nurse or a house worker is five or ten times cheaper than hiring an all-armed programmer

PayPal is in gray norms if your colleague is not a resident of the USA or another country with harsh laws.

Most importantly, do not bring your employee into direct contact with a fat customer, there is no place for trust. Otherwise, you will soon be left behind. Proven by life..
