Without a domain.

I want to come to offices with a minicomputer, plug it into a switch, update their Windows on computers with my Windows and leave.

You are talking about a WSUS server.
You can also "carry it with you", but there is a moment - all PCs of the network must be configured for it.
An alternative may well be
