How to update the server system?

Hello.
There are nas with raid 1 and dell poweredge available. Dell has hyper v and vm 4. There is only 1 TB in the raid.
There was a need to update nas. I would like to take an already adult dell r series and make raid 10 there. The question arose whether it is necessary to transfer everything to a new server, make raid 10 by 4 TB there for storage and raid 1 by 2 TB for the system and vm, or still keep the storage separately ? How then to create an iSCSI connection? Before that, I used only nas from vendors and it's not clear what exactly is used to access the storage?

  1. LUNs for storage and vm-ok are better to part on different disks.
  2. Based on the point above, different LUNs are obtained, therefore different targets for iSCSI
  3. For vm-ok and other disk images - iSCSI or protocols for optics if it is used, for storage - which is more convenient, up to FTP.
