How to understand other people's 1s configurations?

Hello, this is my first time posting so sorry for my inexperience.
I got a job as a 1s programmer, before that I was engaged in small-scale development of configurations on the 1s 8.3 platform. At the interview, they said that they have about 6 configurations, 4 of them are typical "hotels, accounting," 2 more were not named, they are slightly changed. and 2 or 3 that are created from scratch. There are no documents and past specialists left, no contacts.
Actually the question is whether there are quick ways, technologies, methods? To quickly understand all the configurations and somehow organize them into a single system

There is no universal answer. First of all, try to understand what problem this configuration solves for the client. Further, in the process of its support / refinement, you will recognize the internal structure. It won't work otherwise. I do it myself.

Find users who work in databases and see how they work. It is even better to get instructions from them (someone introduced them to the business and she herself teaches newcomers somehow). It is dangerous to rush into the study of unfamiliar configurations on your own - you can break firewood.
Just as an illustration. Suppose you know UT10 and they gave you UT11 as a load - what is there, the number has been changed, but the essence is the same. But not everything is so simple instead of a single directory of counterparties, you already have two, instead of two directories of units of measurement, there is already one, and contact information in general from the information register was transferred to the tabular parts of objects. And in your case, in general, some kind of self-recording, where anything can be used for units of measurement - enumerations indicating the coefficient in the tabular part of the goods, or a directory of packages without subordination, but only indicating a link to the owner / owners.
