How to sniff traffic?

All beaver!
The task is this: to sniff the application traffic as much as possible in order to understand what is sent depending on the user's action.
Installed software:
1. Fiddler for listening
2. Application on IOS
3. Application on the Android emulator (called Memu Play, installed on PC)
What we encountered: We made a hotspot from a laptop. Connected with an IOS device. Exposed in Fiddler settings. The traffic is read extremely badly. Actually, it was to be expected.
Installed the Bucket emulator on the laptop. Put the app in there. I can't get the Wi-Fi connection set up correctly. From here we are faced with the problem that the fiddler does not read nichrome (quite logically)
There is an option to install the application on the laptop itself through the Store. But for this you need to upgrade to win 10 from win 8.1. Well, I really don't want to do that. A colleague did just that, the traffic listens just fine (exactly what is needed to complete the project). But it cannot be that there is only such a way.
The question is. Perhaps someone has already dealt with such perversions? Any advice would be helpful.
