How to set up Windows 10 to run continuously?

We update PCs on the workstations of operators who work around the clock (the old ones have been working for 7 years without shutdowns). Are there any instructions or recommendations for configuring Win 10 for such tasks?
Particularly interested in how to deal with updates? (for the sake of updating, running the image on another computer is not an option, computers maintain their own databases)

Better than LTSC, less fuss, but expensive and licensing hassles.
You can also use the usual top ten, but there you just need to stupidly cut access to the network on the router so that you do not download updates.
If the software works on the seven or eight, you can install them.

So maybe one server, and some pieces of iron with Linux purely for collecting telemetry and sending it to the server?

Since computers work with hardware and write data to the database, they are clearly deprived of access to the Internet, therefore, updates do not download and they do not need to reboot.
So turn off as usual sleep mode, turn off disks, screen saver, turn off the screen.
You can install critical updates manually during regular maintenance.
