Is it possible to set, for example, some fields in the info block that can be filled in, or left blank? At the choice of the administrator. this is in the info block, and if there is no quiet data for them, they simply were not displayed

for a product, additional fields are created in the product properties.
for other infoblocks, you need to go to their settings and there is a Properties tab.
