1. Добавляем пустой элемент:
$ defaults write com.apple.dock persistent-apps -array-add '{"tile-type"="spacer-tile";}'
повторяем столько раз сколько нужно разделителей.
2.Перезапускаем Dock
$ killall Dock
Профит...
