How to roll out updates on the site?

How can I properly roll out updates on the site? So that I can quickly rollback so that the site continues to work if I need to update the database structure, etc.
I will be grateful for the vector where to dig.
ps preferably not a cumbersome tool.

look at any deployment system: capistrano/mina/etc
here it is rather worth starting from what the site is built on.
there are also a bunch of different services: deployhq , deploybot , codeship , etc.
