How to properly use synchronization, via rsync or something else, for 2 laptops?

Data synchronization

There are 2 laptops. How can I use rsync to sync data between them -- only certain folders -- if I'm being paranoid? I don't want to send raw data to some dropbox. Also I don't want to use any commercial SaaS or plugins.
Or, you can even use dropbox, etc., but after all, they will need to be packed into an archive every time, which needs to be encrypted? If so, then it would be better somehow directly, without dropbox.
Also, I have a VPS server, maybe it's better to use it somehow here?
PS
And I also have a lot of flash drives and hard drives, between which I also need to do data synchronization.
