How to properly update Asterisk Core?

Hello. There is an asterisk for ubuntu, for example, 18.5.0, compiled from source. Fully configured and working. A new version 18.6.0 has been released in the current branch. How to update it correctly so that the settings are not overwritten?

And is there, chan_sccp for ciscotelephones, compiled from the sources, now it also needs to be constantly rebuilt?
