How to properly split the space on the server? And is it worth doing it at all?

In general, today they brought me a pretty hefty server with 3 screws under RAID. Total memory 600 GB. How much does it cost to leave space for the system root, and how much for home? And in general, is it worth it to break the place at all?
According to the classics, when I worked with the desktop, I left 40 GB on the root, and then, it never clogged to the top. They
asked to install Ubuntu Server 12.04 initially, but this is a trifle, because. installed in the same way as Debian.
I ask, because This is the first time I've come across such equipment.

1. Root separately, and / var and / home separately. Why? If you reinstall the same Ubuntu, then everything will be formatted. In the separate version, you don't have to worry. I'm not saying that it will need to be rearranged. But it's best to be safe.
2. I'm not hinting at anything, but I would choose for a Debian server. As in that joke: I feel that it is more productive (at work, there are a couple of such different old computers, but the hardware is the same - I just wanted to compare it myself), but I can’t prove it.
