How to properly organize a backup?
The task is this:
Windows Server r2 standart
There is one SSD disk (everything (windows, sql-bases) is on it) for 256 GB and two HDDs of 1 TB each.
It is necessary to make a RAID out of two HDDs (advise which one?) And back up all the information from the SSD to it.

You have two options:
RAID1: full mirroring, the information on one HDD will be an exact copy of the information on the second HDD, if one disk fails, the system will continue to work. In this case, the total space will be only 1TB, the write speed will be somewhere around 80% of the speed of one HDD, the read speed, depending on the settings, can be up to 180% of the speed of one HDD.
RAID0: maximum capacity: 2TB. The write speed is about 180% of the speed of one HDD, the read speed, depending on the settings, can be up to 180% of the speed of one HDD, but there is no redundancy, if one of the HDDs fails, almost all data can be lost.
It is better to backup to a separate server for backup (sorry for the tautology), with a hardware raid controller and the possibility of expanding disk space. Of the raids, you can either RAID 1 (high reliability, medium read speed and low write speed) or 10, slightly lower reliability but higher speed. If for a start you will not take more than 2 screws, then there is only RAID 1.
There is only 1 variant of RAID-1.
You can not backup to the same server.
