How to plan a project?

Hello!
The idea was to create a game.
I know all aspects of creation, but, alas, it is not possible to implement the idea now. I want to write it down.
At first, I wrote down all the ideas in one file, streamlined them, but there is so much information that it is unlikely that it will be possible to understand anything clearly in the future. I decided to split everything into several files. Several dozen documents have been published, each with several pages - it is also impossible to work with them normally.
For several days I tried to find useful information on the topic of working with an idea so that in the future I could easily understand how everything works, what I was thinking about, and so on. I couldn't.
Perhaps someone has already encountered a similar problem? Is there any solution so that you can break everything into blocks, create a web of interactions, etc.? I would be very grateful if someone can give a clear answer.

Mind map is a cool topic when there are some ideas and it is not yet completely clear how and what will happen. If you already have a completed thought, you can simply draw up a technical specification according to GOST, this tedious document should be understandable not only to you, but also to the other participant (and when you look at your creation six months later, you already seem to be a different person)
You can also just cut tasks, for example into a gantt chart
