How to parse gmail correctly?

Hello. Interested in such a moment, is it possible to get specific information from gmail mail? For example, only information about booked rooms in a hotel, and moreover, this information should always be available in the same format.

In gmail, set up filters and labels (labels), on the client imap is used to receive only letters with a certain label.
Parse the text yourself using any programming language available to you, in almost any language there are libraries for working with imap and parsing anything.

Through Google App Script, create a script and put the results in a googledocs tablet or transfer to any site.
