How to organize video shooting for "TimeLaps"?

There is an idea to film the work of a group of people and mount videos in the style of "TimeLaps" (Fast playback). I would like good quality close to HD and reasonable prices for the camera or devices.

The advantage of timelapse is that in order to end up with HD video, almost any camera is enough that can take pictures at specified time intervals and frames larger than 1920 × 1080 pixels.
The only problem is that usually manufacturers do not make periodic photography functions in cameras.
Outputs:
- for some Canon cameras there is a CHDK firmware that adds this function.
- if you have a DSLR - you can use a special remote control with a timer or just an arduino with an IR LED to give the camera a command to take a picture.
- you can connect the camera to the computer via a cable and send a command from the PC to take a picture.

Camera + tripod + intervalometer, stitch the result in any video editor or just ffmpeg.
Digital video camera + tripod, the result is accelerated in any video editor.
