How to make z offset in Cura version 15! (anycubic i3 mega)?

I just bought anycubic i3 mega and ran into a problem that you need to set z offset
in cura 4, this parameter is set through the plugin, but I don’t like version 4 because it slows down for me and the printer prints worse in it (I haven’t figured out why yet)
in gcode you can add M565 Z-1.0; but this creates a thick platform so that later the part cannot be torn off,
in cura 4 this parameter is present and it removes the "elephant's foot" well,
I can't calibrate the table normally because it is slightly convex in the center and the angles set do not help.
help how to do it?
