If 3D is done via Effects > 3D > Extrude & Bevel, then you need to duplicate the text, select Wireframe in the effect options, and then do Object > Expand Apperance. The 3D letter will break up into separate edges of the frame and the excess can be removed, set the desired stroke and placed over the unmodified text.
