How to make a portfolio without breaking anything?

Hello. Here's what interests me.
I worked in one small organization (we made websites to order), then I quit. Officially, according to the Labor Code, no one tripled, there was not even an employment contract. The designer did the design, and I, in turn, did the typesetting, the back end was essentially a minimum, mainly catalogs, business cards, and so on. So, how do I add work to my portfolio? Some sites were redesigned after my departure, so it would be incorrect to leave links to them in the portfolio. But I have copies of all the works. Can I just place these works as child pages of my main portfolio site, of course, blocking them from being indexed by search engines? Or is there some legal subtlety?
